If there is one thing we pride ourselves in, and enjoy to the fullest at Knolle Farm it is great FOOD! Mealtimes so often hold the warmest memories in our family; times of laughter, sharing, and embracing life….the “Glue” of thee times is…You guessed it – some variety of yummy FOOD!

Cuisine conjures up lots of images……warm, creative, healthy, happy, celebrations, picnics, breakfast in bed, fine dining, relaxing and/ or exploring. Inspiration for our cuisine comes from everything we experience, our love of Mother Nature, our travels, our bountiful gardens, our imaginations and taste buds, and our hearts.

We think, “What is the point in coming to a relaxing escape and having to pack up and go find dinner, or cook it yourself?” No…prop up your feet, chill, and let us deliver a perfect dinner to your room – PAMPER YOURSELF – You are worth it!

Take your pick, or just tell us what you desire. Although we do have a great MENU OF FOODS, we ordinarily offer, we will gladly custom design our menus and foods to meet your needs. (Please tell us if you have special dietetic needs.)

Our menus are built around the freshest of vegetables and herbs from our garden, that is essential to our B&B, and such a fun experience for all our guests! Often, seasons dictate our menu selections, as we always aim for things straight off the tree or vine. Beef is always choice or prime, and seafood fresh from our gulf or bay.

~ Menu ~

We will try our best to meet last minute needs; but, being busy ranchers and not having groceries nearby, if at all possible, please give us at least 3 days notice for meals other than breakfast.

Breakfast

We serve a well-balanced breakfast complete with protein, healthy carbohydrates, fiber and fruit - freshly baked pastries and farm fresh eggs. Breakfast is, as always, delivered to your room for your convenience.

We start your day with breakfast in bed - a hearty culinary experience that gets you ready for whatever your exciting day may hold!



Picnic Lunch

Here is a sample of some of our favorites for picnicking. We can also provide chilled salads, fruit and premium Boars Head deli sandwiches. Our chef is happy to make anything you want within reason and with enough notice.

  • Bread, Cheese and Wine
    A Loaf of homemade bread with a variety of Cheeses, a basket of Fruit, and a chilled bottle of Champagne.
  • Stuffed Artichoke
    A loaf of homemade Bread and a tender Artichoke, leaves stuffed with crabmeat, capers and green onions.
  • Quiche Lorraine
    Homemade traditional Quiche filled with bacon and Swiss cheese.
  • Smoked Salmon
    Served European style with capers, cream cheese and sliced onion.
  • Cold Sliced Beef Tenderloin
    Served with horseradish sauce and homemade bread.


Dinner

These are samples of some of our favorite family dishes, with flavors ranging from French to Italian to Mexican to Caribbean. These recipes are tried and true and guaranteed to engender that extra romance and pampering that a home away from home should provide.

  • Prime Angus Ribeye or Beef Tenderloin Steaks
    Our Ranch favorite, seasoned perfectly served with hearty potatoes, and fresh grilled garden vegetables.
  • Veal Scaloppini
    Thin sliced veal medallions baked with a white wine mushroom hunter sauce in and iron skillet and topped with plenty of parmesan cheese.
  • Rack of Lamb
    Fresh New Zealand Lamb crusted with bread crumbs, garlic and fresh parsley. Served with roasted rosemary potatoes, asparagus with fresh parmesan cheese.
    ---or---
    Fresh T-Bone Lamb chops, grilled with lemon zest, fresh olive oil, & herbs.
  • Cornish Game Hen
    Basted with a sweet lime glaze, served with rice pilaf, honey glazed carrots.
  • Lemon Cream Chicken
    Boned chicken breast sautéed and served with a rich lemon cream sauce, laced with sherry and topped with fresh parmesan cheese, served with delicate saffron rice, and a light green vegetable.
  • Pork Tenderloin
    Whole pork tenderloin grilled with molasses glaze and served with a fruity mustard sauce. A delicious combination of flavors. Hearty, but healthy!
  • Scallops Provencale
    Vine-ripened tomatoes, shallots, white wine and lemon reduce to provide a delicate background for tender scallops served over angel hair pasta, with fresh asparagus.
  • Spicy Grilled New Orleans Style Shrimp
    Tangy shrimp grilled with garlic, chilies, pepper and lemon, served with a baguette of French bread, spicy jambalaya style rice and chef’s choice of vegetable.
**Swordfish prepared one of two ways
Simply grilled with garlic and lemon butter.

Prepared “en brochette” with fresh vegetables and a homemade pesto sauce.

* All entrees are served with the chef’s choice of side dishes, fresh vegetables from our garden, a lovely salad and home made breads. A decadent dessert or light appetizer can be added upon request.



The Chef is happy to make anything you want with-in reason and enough notice. Times for dinner vary according to your convenience but is usually served between 6:00 – 7:30.

Introducing our Executive Chef
Aidan Daugherty!


Aidan is setting high standards! He is one of the best new American chefs in the United States and now he’s here in TEXAS! Chef Aidan provides patrons of KFR with brilliantly blended American cuisine. He demonstrates his talent and zeal in every satisfying dish. The dinning experience is full of purely exquisite tastes and wonderful creativity.

Chef Aidan has an Associates Degree in the Culinary Arts and a Bachelors Degree in Culinary Arts management, both from the Culinary Institute of America in New York. He has been working in the hospitality industry all his life, and has traveled all over the country learning from many amazing people.

Aidan has quite the knack for combining flavors, textures, and spices that will please even the most discerning of palates. From simple mac and cheese, (how about a little touch of lobster and truffles?), to his “wow” Barbeque.

One of Aidan’s true passions is teaching. He loves to entertain and educate people of the simple pleasure of cooking. His enthusiasm is quite catching! You will walk away with a deeper appreciation for fresh food, and excited to show off your new-found knowledge and talents to family and friends.

The Culinary arts are an ever growing, ever changing vast array of deep culture and rich history. The food and drink available at one time helped to shape society as we know it today.

There is so much to learn about food that people spend years studying for a college degree and it is just enough to get a foot in the door for a chance to continue learning something new every day!

That is why the title of CHEF is held in such high esteem in today’s world. A chef does not just feed you. He entertains you with exciting flavors and combinations; his food has history, meaning, and depth.

It’s not just a meal. It is an experience to inspire you, to delight you, and to give you new skills to take home and share with friends and family.





~ Our Garden And Orchard ~


“The Farmer’s Dell” and “Grump’s Grove”


Gardening and fresh food should be fun for all ages! It is an amazing thing to watch your own efforts and Mother Nature’s bounty going into culinary creations and experiences. Since we are a farm and ranch, we naturally want to grow as much as possible right here, and have guests experience the fun of watching, picking, and being immersed in that way of life….(Also, it tastes sooo much better!)

Our garden is the center of fun for kids too, with it’s giant play-scape right in the middle. A little one might just slide their way into the brocolli plant or green bean bush; while their let him pick a sample and learn something new.

We have recently added an amazing addition to our gardening areas – an Orchard, with 5 different varieties of olives, from the …… There are also dozens of peach and avacado trees and a lovely citrus area. Polinated by the bees from our bee hives, and cared for daily by lots of loving hands, there is the promise of fresh peaches, lemons, lemons & limes, grapefruit,, oranges, and avacadoes, not to mention South Texas Olives and Honey.

We hope to be able to supply guests our own olives and olive oil, but all the fabulous extras, including soap and just about anything else we can create from this amazing plant with such a long and pivotal history in the world.
